SoBou is not just a new restaurant, but a new kind of restaurant. The idea is to fuzz out the structure of the standard restaurant meal, replacing it with a menu that more resembles that of a first-class bar. What remains is a selection of eats that could be easily understood by someone who has never eaten in a restaurant before.
